Ingredients of marination in mutton

Mutton 1 Kg

Curd 1 cup

Cumin powder 1 tsp

Mustard Oil 1/2 cup

Salt to taste

Turmeric 1 tsp

Coriander powder 1 tsp

Red chili powder 1 tsp

Mace Powder 1/2 tsp

Papaya paste 3 tbsp

Spices for cooking rice

Basmati rice 2 cups

Cinnamon 1 inch

Green Cardamom 2

Chakri Flowers 1

Bay leaf 1

Nutmeg 1/2 piece

Mace 1/2 teaspoon

Salt 1/2 tsp

To cook mutton

Cumin seeds 2 tsp

Ginger paste 1 tsp

Garlic paste 1 tsp

Garam masala powder 1 tsp

Oil 1/4 cup

Onion 1/2 cup

Salt 1/2 tsp

Ingredients for Saffron Milk

Milk 1/4 cup

5-6 threads of saffron

Kewda water 2 tbsp

Rose water 1 tbsp


To decorate biryani

Ghee 1/2 cup

Onion Flakes 1 cup

Chopped coriander leaves 1 tbsp

Mint leaves 1 tbsp

Kasuri Methi Powder 1 Tbsp

Lemon juice

Fry onions like this (fry onions are called barista)

Put oil in a heavy pan and keep it on a medium flame for heating.

When the oil is hot, add onion flakes little by little and fry them till they become golden. Keep in mind that we have to fry half the onions.

- Frying less onion and frying it will not burn them.

- Put water in the rice and soak it.

Mutton Recipe

Add remaining onion pieces, green chilies and fry for a while.

After this, add the marinated mutton and cook on the high flame while stirring for 7-8 minutes.

After this, cook coriander, cumin powder and red chili powder well in mutton.

Put 3 cups of water in the mutton and let it boil.


After boiling reduce the flame and let the mutton cook well.

Keep it on low flame and cook for 15 minutes. By then its water will dry up.

Turn off the heat.

Now boil rice for biryani.

For this, put cardamom, cinnamon, cloves, mace, nutmeg, black pepper, cumin, and Chakri flowers in a small cloth and make a bundle. If you want, you can also keep these spices in a tea bag sieve.

- In a large pot, add 4 cups of water, rice, bay leaf, salt, and a spice bundle and cover it.

- 1/3 of the rice has to be cooked. Keep it on a medium flame for 8-10 minutes.

Turn off the heat when it boils well. After filtering the water, spread the rice on a big plate or a big cotton cloth. Remove the bundle.

Easy method of making Muradabadi Yakhni Chicken Biryani

While the rice is getting cold, prepare milk with saffron.

- Heat the milk lightly. Mix saffron, rose water, kevda in it and keep it.

 Make biryani now

- Take a second heavy bottomed utensil.

Put 2 tbsp ghee in it and keep it on a medium flame for heating.

- Apply ghee around the pot.

- Turn off the heat. Lay the rice layer first in the pot. On top of it add the cooked mutton, then some saffron milk, roasted onion and ghee. Repeat this process.

Layer is to be applied till the rice, mutton and other ingredients are over. But keep in mind that the last layer is of rice.

After this, add mint, coriander leaves, green chilies, and lemon juice.

Cover the vessel and jam its edges with foil. You can also add flour if you want. Or you can put some heavy things on the lid.

Put the pot on low flame and set it aside for 40 minutes.

After this, turn off the heat and leave the biryani for 10 minutes.

Remove the lid and add cashews and raisins to the biryani.

Eat and serve the prepared biryani with raita and salad.
